This nose-to-tail pig butchery workshop will demonstrate how to break down a carcass and create classic recipes. We will start with a whole (dressed) 185 lb Tamworth/Large Black hog raised in Maine. The class will cover the basics on equipment, knife skills and exactly where the different cuts of pork come from. Master butcher, Craig Linke will demonstrate traditional butchery techniques such as seam butchery, which can be done without a band-saw. We will share techniques and recipes with you such as fresh sausage, pancetta, jowl (guanciale), rillettes and coppa. We will also include plenty of tips, like how best to prepare pork belly, how to avoid chewy meat and how to identify free-range, good quality pork. We will end the class with a delicious meal of prepared charcuterie including; pate, rillettes, cooked sausages, guanciale and Craig's tasty Pennsylvania Dutch scrapple.<br />

We harvested our first crop of beets on Tuesday, along with some beautiful mesculun mix, and our carrots are super close to being ready. Greg built another chicken tractor, or rather duck tractor, super fast, and now our ducks are happily out in the pasture next to the meat birds. We're also gearing up for our first Summer Supper dinner, which will be on July 2nd. We're pretty stoked to get those going and, hopefully, continue them throughout the summer.<br /><br /> I feel super lucky to be here with Meg and Greg and have this opportunity to learn more about farming and all that Maine life has to offer. So in addition to the chickshaw for the layers, we also built a Salatin style chicken tractor for our Freedom Ranger broilers. The tractor is a simple, bottomless frame that allows us to move the chickens to fresh grass once or twice a day.<br />

Salatin's pens are 10 X 12 and he recommends using pressure treated lumber ripped and cut into the necessary sizes. We opted for cedar 1 X 4s and 1 X 2s to skirt around the pressure treated and threw a couple of 8 foot 2 X 4s on for added support. We also made our tractor 8 X 10 feet because we're putting only 50 birds in and it made it cheaper and lighter.<br />

Some other changes we made were replacing the corrugated aluminum panels with white plastic ones. The aluminum was impossible to find in our area and the plastic seems to be holding up fine and provides adequate shade and protection for the birds. <br />

We're using 8 inch steel lawn mower wheels to move the tractor. They're held on with a wing nut on a 1/2 inch carriage bolt. The wing nut allows us to remove the wheels and replace them pretty easily as needed. It's proving to be a decent system but the wheels do get caught up on uneven ground and lifting the corners to place the wheels on can be tricky if the frame is completely flush with the ground. Handles are in the future and slightly larger wheels will most likely be added to the duck tractor to try and remedy the terrain issue. <br />

As we wait for our back-ordered bell drinkers we put together this 5 gallon bucket waterer. The bucket is bolted to the plastic tray through the bottom and I drilled two 1/4 inch holes about 1 1/2 inches up from the base of the bucket to allow the pan to fill. It's working ok for now but the bucket lid hasn't been holding the pressure one hundred percent and the water has been slowly draining throughout the day. Some left over scraps of 2 bys fit the bill for some corner braces. These pieces are 3 feet tall but I later cut them to 2 feet as I realized 3 feet was excessively tall. I snipped the hardware cloth and fit these into the corners. <br />

Tada! So I stopped taking pictures but after some center bracing at 4 feet i screwed some scrap wood onto the bottom and filled the rest of the walls with ploy board. This made it lighter so we can move the box around if need be and also allowed for sunlight to come in for some additional and natural heat. The roof is just hardware cloth that we can roll up and back on.<br />

We set the brooder up with two 250-watt heat lamps for 50 birds, and laid paper towels on top of the shavings for the first 24 hours. The chicks seemed right at home. <br />

When it came to making a movable chicken house for our day range layers this year we turned to none other than our good friend and mentor Eliot Coleman. Last year Eliot designed and built a fairly lightweight and reasonably affordable movable house made entirely of material readily available at the local hardware store. So what did we do? We got the plans and copied it!<br />

The frame is primarily made up of 1 3/8 inch fence post with 1 inch emt conduit for the bent hoops. With a little creative bending on the <a href="http://www.johnnyseeds.com/p-7707-quick-hoops-low-tunnel-bender-6-diam-.aspx">quick hoop bender</a>, a lot of self drilling tek screws, some standard fencing hardware and a boatload of carriage bolts the design came together rather nicely. We modified our design slightly and mounted the nesting box on the rear. We shortened the depth of it so it would fit and, figured it would resolve the issue of having too much weight at the handle. This meant mounting the door in the front, which caused no problems.<br />

You'll also notice the burly 26 inch cart wheels. They help the cart over any uneven ground and additionally serve as a shady spot for the ladies on hot days. The height allows for the birds to sit under the house comfortably.<br />

The inside has 1/2 inch by 1/2 inch hardware cloth for the floor. The idea is that the droppings will fall through the floor when the birds are in the house at night, continuing to fertilize the fields. We already know that as they get older there's a good chance it will cake up and have to be cleaned out, but 3/4 inch and 1/2 inch by 1 inch cloth are hard to come by without special ordering and potentially pose the risk of predators being able to reach in.<br />

I cut the roosts down from some old 1 3/4 inch thick lumber into 2 1/2 inch tall pieces long enough to stretch the length of the house. After angling the tops and giving them a quick sanding they're mounted onto the frame with some 5 inch carriage bolts. This was the other modification from Eliot's design. His box is mounted lower than the floor of the frame, but by making the roosts taller, I'm hoping the birds won't sleep in the nesting box. If it becomes an issue we'll have to put doors in the nesting box or use brackets to mount it lower.<br />

The nesting box is constructed using some 1X8s, 1X10s and 1X12s. It's a simple design with some bracing and a hinged, angled roof. I coated the exterior with Thompson's Water Seal and left the inside all natural. The design will allow for plenty of room for our 30 bird flock and can easily accommodate more, but we like the idea of each bird having a little over a square foot to itself. Eliot puts 50 in each of his which works out well and I imagine you could push it to upwards of 70, but any more than that and the birds would start getting pretty cramped. <br />

Hot, long days fill the week and seedlings become full grown plants before your eyes. We've had a lot of different projects going on over here, from keeping the gardens weed free to brooding our first run of broiler chicks, layers and pekin ducks. Our first batch of piglets joined us in May as well - 6 Red Wattle X Landrace/Large Black are happily grazing in the pasture. With all of these additions comes lots of infrastructure construction and we've kept ourselves well occupied building a brooder pen for the chicks and ducklings as well as a chicken tractor for the freedom ranger meat birds and a "chickshaw" (more on this later) for our layers.<br />

Tomatoes! Our Sun Gold and Apero cherry tomatoes started ripening up in full swing this week, and along with them came some of the long awaited heirloom varieties we planted. We also got a few of our chinese eggplant which we grew just for home use. Nothing seems to grow faster than these guys. Fruits that are the size of your thumb can burst to what you see here in just 2 days - pretty remarkable. They were looking great in the garden and we had a good amount to harvest. Here is a crate with all four varieties we're growing this year. There are two dark red beets - Merlin and Detroit Dark Red, Chioggia beets (pink with a striped pink and white inside), and Burpee's golden beets. They have a really tender and thin skin and a striking magenta color right when they come out of the ground. Here's bunches that are bagged and ready for market. We have four varieties of carrots that are included in the bunches - orange Nelson, yellow Rainbow, purple Dragon and Purple Haze. People always ask us if the colored carrots taste the same. The truth is that all of the varieties taste like a carrot, but when they are back to back there are definitely subtle differences in their flavors - which makes for a nice combination when eating or cooking with them. </div><div class="separator" style="clear: both; text-align: center;"><br />

We go at low tide so that all of the mussels are exposed on the beach and rocks or in very shallow water. We've been out clamming too but I prefer the mussels because they're easier to get clean. When we got them home we scrubbed off the barnacles and made a traditional pasta with mussels, parsley, a little white wine and parmigiano reggiano. We are now proudly raising 5 Large Black/Berkshire heritage cross pigs for slaughter. The pickup was a little traumatic for the piggies but once we got them loaded onto the pickup truck i think they really enjoyed the breezy ride.<br />

We had them in a small pen attached to the house for the first couple of days so they could relax into their new home without testing the electric fence too much. </div><br />

It's got some good shade along the side fence under some apple trees, which are doubling up as scratching posts. The long grass is being stomped down quickly and they're doing a good amount of rooting in the ground and digging up a lot of the bramble. We've been feeding them a good ration of slops from Buck's Harbor Market down the road, and mixing in a balanced pig feed for a steady protein supplement. These shots were taken a couple of weeks ago and show our layout and trellising system for the house. "The Jungle" is 22 X 48 feet and can accommodate 6 - 44 foot beds, with one foot paths between 30 inch beds and a couple of feet of path at each end. The western most bed has been planted to a few varieties of cucumber spaced at two feet. Greg and I are going to be getting 5 Large Black/ Berkshire heritage cross piglets on July 1st, and we can't wait!! </span>It took us forever to find piglets but we lucked out and found the perfect cross heritage breed. Our neighbor Deborah Evans breeds and raises large black crosses but unfortunately we are getting our piglets from someone else, hers are all going to the butcher. We stopped by her farm last week and got to see her beautiful animals. She has the best dogs!! They're Australian shepherds and they were so friendly and cuddly. I couldn't get enough of them. She has quite the operation over there. She's raising so many animals, a herd of different breeds of goats, sheep who've just had the cutest baby lambs ever, guinea hens, 2 donkeys, 1 llama, 3 dogs, 3 large black sows, 11 5 month old Lg black/ Tamworth piglets, and a brand new litter of 8 Lg black/ berkshire piglets. They had just been born that morning when we stopped by. It was quite a sight to see and her farm is beautiful. Her property is located right across Smith Cove from Castine. It was beautiful. "The house, four square and white, in good Maine tradition, was built in 1819 by David Wasson, a ship builder who retired to become a farmer." We also learned of how David's Folly got it's name. "In those days, people scoffed at the idea of farming so near to the sea and called the new venture David's Folly." Minvera bought the property in 1920 and ran it as a bed and breakfast / earthworm farm until well into the 80's. Anyways, here are some pics of the house and property. It took us a while to get the house looking like this but I think it's quite nice now. The front of the house looks different now thanks to my Mom, Greg and our friend Mark. We moved the wood pile into the barn and my mom and I planted flower beds. I'll take some new pictures of the exterior and post them tomorrow. Hope you enjoy!!<br />

<span style="font-family: times new roman;">Our good friends Costas and Sally Christ own and run an organic wild blueberry farm called Blue Sky Organic Blueberry Farm in Harborside, ME. Their berries are amazing, so sweet and plump. Every other year they burn some of their fields to promote more blueberries the following year. The year you burn a field forces the plants to put all of their energy into forming new growth underneath and producing more foliage. The following year the plants produce more berries than they would regularly, both to make up for the loss of the previous year and because of the extra foliage, which provides the plants with more vigor. Pretty cool. Greg and I were invited to help burn one of their fields this year. It was crazy. Lots of fire, water and panic attacks. It was a perfect day to do it - wind blowing in the right direction and nice and dry - and because of that the fire stayed under control and everything went pretty smooth. To control the fire legally you need 1,000 gallons of mobile water at the site and about 4 to 6 people with indian pumps. You spray the edges of your fields with tons of water and amazingly IT STOPS THE FIRE. <span style="font-family: times new roman; font-size: 100%;">Our compost arrived the other day and boy was it some nice compost. We bought 30 yards from Kinney Compost in Knox, ME. Wes Kinney is a real sweetheart who really knows his stuff. We'd like to think he makes some of the best compost in Maine. All organic and natural, it has a horse and cow manure base with a number of additions from the sea. Wes turns the compost a number of times in its aging process and regulates the temperature to promote microbial activity while regulating weed seeds and ensuring that the compost never gets too hot. We use a 4-way seeder for densely planted crops like carrots and greens, which allows us to plant twelve rows to the bed in straight rows. In the background you can see our first planting of summer squash and zucchini which we set out under a layer of remay. The remay creates a micro-climate for the plants, keeping them and the soil about ten degrees warmer than the outside air.<br />

In the center are a couple of simple saw horses providing more table space. It's a small space but with good timing and management it should suffice for the scale we are producing on.<br />

We seeded all sorts of crops including onions, broccoli, cauliflower, kale, peas, beans, beets, celery, lettuce, tomatoes, peppers, cucumbers and more. The wooden frame in the middle is a box I built to keep mice out. We had some visitors the first night we had seeds planted and they devoured a number of our bean, melon and cucumber seeds. It is a simple box made with scrap wood fit for the table, and a screen is nailed to the top so that the soil blocks still have good air circulation. We ended up catching them in some traps we set and since then they haven't caused too much of a problem.<br />

In just a couple of weeks almost all of the seedlings had popped and many are ready to go into the ground. We plant all of our seedlings in the plant house using soil blocks. A technique created by the Dutch and modernized by Eliot Coleman, soil blocks are created using a soil block maker. There are different sized blocks for different seeds, but the general idea is that you form a tray of blocks with moist potting soil and plant your seeds in those blocks. When the seedlings are ready to be transplanted or potted on, you simply pull the soil block from the tray and plant it in the ground. The roots of the plant hold the soil together and the system eliminates the need for any pots. In addition, you are only using the minimum amount of space required for each crop, and in a small plant house like ours, we need all of the space we can muster up. But I'll write more on soil blocks later.<br />
